Filled Mushrooms

I've been in a total cooking and baking mood lately. Maybe with my own flat I am also turning into a super housewife. Not that I want to become one fulltime in the near future, but I guess some cooking skills are never wrong :)

This time I decided to feed my dad and Mr.B. while they helped me redo my bathroom and kitchen (another DIY coming soon!). I made filled mushrooms with a greek inspired sauce.

Ingrediences:
Oil
Spices (Salt, Pepper & Cayenne)
Grounded Beef
big Mushrooms
Onion
Garlic
Tomato paste
Edam Cheese
Feta Cheese

Preparations:
Pre-heat the oven to 200 degrees Celsius (What's that in Fahrenheit?!) and heat a pan for the grounded Beef.

Clean the mushrooms and hollow them out (don't throw the inside away). Then put them into a big enough casserole dish. Each of the mushroom heads needs to have enough space.

Cut the onion and garlic into small cubes and fry them with the grounded beef. Cut the mushroom stems and the leftovers. Add the spices, tomato paste and fry all. Finally add some feta cheese and mix the cheese under until it starts to melt. At that exact moment take the pan from the headed plate and fill the mushrooms up to the edge with the mass.

Add slices of edam cheese on top of the mushrooms, sprinkle them with oil. Then bake them for about 30min at 200 degrees in the pre-heated oven.

While those bake in the oven, you can make the leftover grounded beef mass into a sauce. Just add more tomato paste and water, season it with spices and fresh herbs and let it cook for some time. When the mushrooms are ready, add the sauce. I served the meal with rice, but you can also eat them with a slice of dark bread, noodles or baked potato wedges.

Hope you liked this inspiration and maybe try it at home as well. I think filled with fried vegetables and tofu, this could make an amazing meal for vegetarians as well!

those really do look tasty. I wish I shared your passion for cooking but after cooking dinner everyday 6 days a week it gets really old.
