Wild-Berry Muffins

I love cooking, but even more I enjoy baking. For years it has been a tradition in my family to have a freshly baked cake or some brownies for sunday afternoon coffee. Since my time as an Au Pair in the USA, I have been in love with those little muffins and cupcakes. I enjoy making them as they are easy and quick, but still look super and are a great little dessert. Last week I made some muffins with wild-berries. Even my mom commented on them and wanted to know how I made them :) Best compliment ever when the best cook I know asks me for my recipe! I also wanted to share this little secret with you all and hope some of you will try them as well.

Wild Berry Muffins 3




Ingrediences:
250g Flour
100g Sugar
2 Eggs
1 Tblsp Cinnamon
75g Butter
2,5 Tsp baking powder
250g fresh or frozen Wild-Berries
250ml Milk
Juice of one lemon and some rasps of lemon paring

Decoration:
Make some icing with lemon juice and powdered sugar or add some coarse sugar when the muffins are still warm.

First mix the flour, baking powder and cinnamon in one bowl. Take the two eggs, add the lemon juice and paring and add the sugar. Mix it all with a electronic mixer. Slowly add the milk. Take the flour mixture and slowly (while still using the mixer) add it into the dough. Now take the fruits and put them to the whole batter. Take a spoon and carefully fold them into the dough.
Now you have to be quick as the air that you mixed into the batter will quickly go away and those muffins won't rise as nicely. 
I use a 12-piece silicon muffin pan and add those little muffin papers. The silicon pan is just easier to get the muffins out and easier to clean as well. Fill them up with a spoon almost up to the edge. Cook books always tell you to fill it up 3/4, but that is a waste. The muffins could use some more batter and otherwise you would have so much leftovers. My tip to add the dough: Take one spoon to add the mass and use another one to scrape it off from that spoon. Works wonders and let's you use all the good batter.

Bake them in the oven (pre-heated at 180 degrees celcius) for about 20-25 minutes.

I originally wanted to add some coarse sugar, but they looked so awesome just like this and were super delicious!
