Cake in a Flower Pot - Perfect for Mother's Day

Mother's Day is right around the corner and I think this could be a perfect present for an afternoon with your mom. I made it with the help of my new favourite TV cook - Enie. She only bakes the most delicious dessert in her show "Enie backt" and I found this one from her website as well.

Before starting the baking process, soak the pots for 30min in cold water so they won't break when baking.

Ingrediences for 6-8 cupcakes (for my 12cm pots)


Cupcakes
  • 150 g dark chocolate
  • 125 g butter
  • 225 g sugar (brown is best)
  • 1 pack vanilla sugar
  • salt
  • 4 medium eggs
  • 160 g flour
  • 1 Tsp. Baking powder
  • 1 Tsp. baking cocoa
Topping
  • 200 g cream cheese
  • 3 Tbsp sugar
  • 3 Tbsp baking cocoa
  • dark cookies (oreo or else)
to work with
  • 8 clay planting pots (new and unused)
  • 8 small round wafers or cupcake paper forms (the wafers can be eaten, with the paper your guests need to be careful)
  • 8 green straws
  • 8 fresh flowers (watch out that they are not dangerous - eatable flowers are best)

Cut the chocolate and melt it with the sugar and butter. Add all the other ingredients together into a mixing bowl and stir them with a mixer. Add the small round wafers or the paper forms into the flower pots and add the dough to the forms. Bake them for 25-30min at 180 degrees. With the pots it can change a bit, mine took longer. Use a wooden stick to test if they are done.

Let them cool down. During the waiting time, mix the topping. Use the cream cheese, baking cocoa and sugar and mix them together. If it is a little dense, add a splash of milk. Cut the straw and add it to the muffins. Then put the topping to the pot. Leave a bit of space for the "earth" coat.

To make it look like a real flower pot, the "earth" coat needs to be added. Put the dark chocolate cookies into a towel and hit hard on a wooden board or your kitchen counter. make the pieces as small as possible and add them to the top until no frosting is visible anymore. Cut the flowers and put them into the straw top. Decorate the pot et voilĂ ! Perfect little gift for Mother's Day , as a small present or to surprise your guests with a great dessert!
