It's no secret that I love eating sweet stuff, especially cookies! There was no question wether or not I would attend today's International Cookie Day. I was invited a while ago by some people on facebook to join the activity. Normally, I tend to skip those without a really important cause, but well, cookies I just could not resist!
As you all know, I am lactose intolerant and most cookies you can buy in stores are just stuffed with lactose. Major issue for me, but I enjoy baking a lot and therefore decided to make a big badge of "oatmeal-raising cookies".
Ingredients for 30-40 big cookies
300g Flour
1 Tsp. Natron
1 Tsp. Cinnamon
1 Tsp. Salt
250g Soft Butter
300g Sugar
1 Pack Vanilla Sugar
3 Tbsp. Treacle
2 Eggs
300g Oats
160g Raisins
2 Tbsp. Orange Juice
mix it all together - heat the oven on 180 degrees - form balls with 4cm diameter - leave 8cm of space between them (it is really needed!) - bake for ca.12-15min
Enjoy some cookies!!!
I will share some of the lot with my friends and family on our trip to Leipzig tomorrow, but I already had my fair share of these today.
